Butterscotch Cookies Recipe

1 c. shortening
3/4 c. white sugar
3/4 c. brown sugar
2 eggs
1 T. hot water
12 oz. bag butterscotch chips
1 c. walnuts, chopped
1 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
2 c. quick oatmeal

Cream shortening and sugars; add eggs, water and vanilla. Mix together the flour, soda and salt and add to sugar mixture. Stir in the oatmeal and then add the chips and nuts. Drop by spoonful onto greased cookie sheet. Bake at 375 for 10-12 minutes.
