16 oz hot owens sausage
1/2 - 1 onion chopped
4 oz sliced muchrooms
6-8 eggs
3 Tbsp sour cream picante sauce
4 oz shredded cheddar
4 oz velveeta shreds
4 oz mozzarella cheese shredded

Directions:
Directions:
Cook sausage, onions and mushrooms together and drain. Beat eggs with sour cream in blender for 1 minute. Pour eggs in 2 qt. casserole(greased). Bake in 400 oven until "softly set" (4-7 min). Spread 6-10 Tbsp picante over eggs. Pat sausage over picante sauce. Add shredded cheese. Bake at 325 for 30 minutes.
