Chicken: bone-in chicken breasts, cut in half (figure about 1.5 half-pieces per person).

Marinade: equal parts olive oil, soy sauce and balsamic vinegar (a half cup of each is enough to do a lot of chicken). Add oregano and basil to taste.

Wash the chicken pieces, pat dry, and place them in either a glass dish or a big plastic food bag that seals tightly.

Whisk the marinade ingredients well and pour over the chicken. Marinate for at least an hour or for as long as overnight. Turn the chicken over in the dish, or turn over the bag, periodically.

Get the grill going and wait until it's quite hot. Put the chicken pieces on the grill and sear them over high heat, 3 or 4 minutes on each side. Then reduce grill heat (or, if using charcoal, move the chicken to a cooler part of the grill) and cook with grill covered for about 20-25 minutes more or until done, turning once or twice more during the process.
