1/2 c. sugar
1/2 c. freshly squeezed lemon juice
2 T. lemon zest
4 T. unsalted butter, room temp.

Directions:
Directions:
Fill the bottom pan of a double boiler half full of water and bring to a slow simmer. In the top of the double boiler, whisk to combine eggs, sugar and lemon zest. Stir in the lemon juice. Stir the mixture while it thickens. Mixture is ready when it is thick enough to coat the back of a spoon (approx. 6-8 min.). Cut butter into pieces. Remove the top of the double boiler from the heat and gradually stir in the pieces of butter. When the mixture is smooth and all the butter has melted, strain it through a fine mesh sieve into a glass or ceramic serving dish. The curd will thicken as it cools. Serve warm or cold. Store leftovers in refrigerator.

I usually don't bother straining the lemon curd. I like the extra sourness from leaving the lemon zest.
