2 eggs
1 c. sugar
1/2 tsp. salt
1/2 c. vegetable oil
2 c. apricots plus juice (or thick apricot puree)
2 c. flour
1 tsp. cinnamon
1 tsp. ground cloves
2 tsp. soda
1 tbsp hot water
1 c. coarsely chopped nuts (optional)

Directions:
Directions:
Generously grease a 9x13 pan. In a large mixing bowl combine eggs, sugar, salt and oil; beat well. Stir in apricots or apricot puree. Add flour, spices and soda mixture with hot water. Stir in nuts if desired. Pour into prepared baking pan. Bake at 350 for 25 - 30 minutes. Cool.

This tastes good with powdered sugar sprinkled over the top or with cream cheese frosting.
