1-3/4 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
2 tsp. ginger
1/2 tsp. nutmeg
1/4 tsp. cloves
1 c. canned pumpkin
1 c. light brown sugar
1/2 c. unsalted butter
2 eggs
1/4 c. apple juice
1 c. chopped dates

Directions:

Preheat oven to 350 F. Lightly grease a 12-cup muffin tin. In a medium bowl, sift together flour, baking soda, baking powder, salt and spices; set aside. In a large bowl, whisk together pumpkin, brown sugar and butter. Add eggs and whisk until smooth. Add apple juice and whisk again. Gradually add the dry ingredients to the pumpkin mixture and stir until thoroughly combined. Fold in the dates. Divide the batter between the muffin cups. Bake for 20-25 minutes or until toothpick comes out clean. Cool in pan for 10 minutes, then transfer muffins to a wire rack to cool. Serve slightly warm.
