2 c. flour
1-1/4 c. sugar
2 t. baking soda
2 t. cinnamon
1/2 t. salt
2 c. carrots, grated
2 t. vanilla
1/2 c. coconut
1/2 c. pecans, chopped
3 eggs
1 c. vegetable oil
1 apple, cored and shredded

Directions:
Directions:
In a large mixing bowl, combine flour, sugar, baking soda, cinnamon and salt. Stir in carrots, coconut, and pecans. In separte bowl, combine eggs, oil, apple, and vanilla. Add to flour mixture. Stir until combined ONLY. Spoon into greased muffin tins. BAke at 350 for 15 to 18 minutes.
