20 ripe tomatoes

8 oz. fresh mozzarella cheese, drained and cut into 20 pieces

1/2 cup olive oil

a bunch of basil, torn

sea salt and freshly ground black pepper

a large backing tray, lightly oiled

Directions:
Directions:
Cut a deep cross, to about half way down, in the top of each tomato and stuff a piece of mozzarella into each. Transfer to the baking tray and sprinkle with salt and pepper. Cook in a preheated oven at 325F for 25 minutes until the tomatoes are beginning to soften and open up. Sprinkle with oil and basil and serve warm.
