4 medium artichokes, stems removed
extra virgin olive oil, to serve

Directions:
Directions:
Put the artichokes into a large saucepan, stem side down, cover with water, and bring to a boil. Simmer for 40 minutes, until an outer leaf pulls away easily. Drain well and turn the artichokes upside down in a colander to cool and drain off excess water. Serve warm, with olive oil for dipping.
