2 cans Blackeyed peas with peppers
2 cups cooked rice
1 lb. browned ground meat (Jimmy Dean sausage is good to use instead of the ground meat)
1-1/2 cups grated cheddar cheese
onion and garlic to taste
1 can rotel tomatoes - drained
1/2 bell pepper - chopped
salt and pepper to taste

Directions:

Mix together and bake at 325 for 25 minutes. Put alittle cheese on top during last 5 minutes.
