10 Colossal "Dry" Scallops
10 bacon slices, cut in half
2 tbsps. dark brown sugar
2 tsps. minced fresh ginger
1/3 cup soy sauce

Directions:
Directions:
Mix sugar, ginger and soy sauce. Cut scallops in halves or thirds if they are really large. Toss in soy mixture and marinate for about 20 minutes.

Wrap each scallop with a bacon strip and secure in place with a toothpick. Sear scallops/bacon on a medium hot grill. They're usually done when the bacon is well done. You can also broil in your oven, which takes about 15 minutes. Note: brush scallops with left over marinade while cooking.
