2 medium zucchini's, sliced and air dried
1 tsp. salt
1/2 tsp. ground black pepper
1 cup grated Parmesan cheese
1 cup bread crumbs
1/2 tsp. red chili flakes
1 tsp. fresh chopped thyme leaves
3 eggs, beaten

Directions:
Directions:
Slice the zucchini into 1/2 inch rounds. Mix together in a clean work bowl the salt, pepper, 1/4 cup grated Parmesan cheese, bread crumbs, red chili flakes and thyme leaves. Dip the zucchini in the beaten eggs, and then dredge them in the bread crumb mixture. Heat a pan filled with 2 inches oil. Fry the zucchini in small batches for 3 to 4 minutes, and golden brown and crisp. Remove to a towel lined tray to drain off the excess oil. Add remaining 3/4 cup of Parmesan cheese while still hot. Serve warm.
