1/4 c. oleo
1 c. chopped onion
4 c. freshly cooked white rice
2 c. sour cream
1 c. cream-style cottage cheese
1 large bay leaf crumbled
1/2 tsp salt
1/8 tsp pepper
2 cans (4 oz) whole green chilies drained, halved lenghtwise, leaving seeds
chopped parsley

Directions:

1. Preheat oven to 375. Lightly grease a 12x8x2 baking dish (2 qt).
2. In hot butter in large skillet, saute onion until golden - about 5 minutes.
3. Remove from heat - stir in hot rice, sour cream, cottage cheese, bay leaf, salt & pepper; toss lightly to mix well.
4. Layer half the rice mixture in bottom of baking dish, then half chilies, sprinkle with half of cheese. Repeat layers.
5. Bake, uncovered, 25 minutes or until bubbly and hot. Sprinkle with chopped parsley.

Note well!!! Ingredient list doesn't mention cheese, but the instructions do mention a cheese layer. I would think you could use any kind of grated cheese. If anyone tries this successfully, let the rest of us know. Thanks!
