3 medium yellow cooking onions, choppped (about 2 cups)
2 Tbsp butter
4 medium potatoes, peeled & cubed (about 3 cups)
2 cups boiling water
2 chicken flavoured boullion cubes
1/4 tsp salt
dash of pepper
3 cups milk
1 cup shredded cheddar cheese

Directions:
Directions:
In a large saucepan, cook onions in butter until limp, but not brown. Add potatoes, water, boullion cubes, salt and pepper. Cover, bring to boil, then simmer until potatoes are tender, about 15 minutes.
Remove from heat and blend in batches in blender. Return to saucepan, add milk and cheese. Reheat slowly until cheese melts. Do not boil.

You may add parsley flakes or tiny bits of carrot for colour if you wish. This is a hearty soup and is quite filling served alone.
