5 lbs medium yellow squash
2 eggs beaten
1 c. whole wheat bread crumbs
1 stick butter
1/4 c sugar
2 Tbsp grated medium cheese
2 Tbsp chopped onion
salt & pepper

Directions:
Directions:
Boil squash, drain, mash and drain again. Combine all ingredients. Spray casserole with PAM. Put squash mixture in casserole. Top with bread crumbs. Bake at 350 for 30 minutes.

The first time we had this, the Ruddy girls brought Mom and Dad dinner when Daddy was sick. They are so sweet!
