1 (10 oz) pkg frozen chopped spinach
3 Tbsp butter or oleo
1/2 medium onion chopped
2 1/2 Tbsp enriched all purpose flour
2 chicken bouillon cubes
3 1/2 c. milk
1 tsp salt
1/4 tsp pepper

Directions:
Directions:
Cook spinach as directed; drain. Melt butter in heavy saucepan. Add onion and saute until tender but not brown. Blend in flour. Add bouillon cubes. Gradually stir in milk and cook, stirring over moderate heat until soup thickens and just comes to a boil. Stir in salt, pepper and spinach. Chill several hours or overnight. Garnish with croutons, sour cream, nutmeg, etc.
