2 1/2 lb baby carrots
1/2 c. mayonnaise
2 Tbsp minced onion
1 Tbsp horseradish
salt and pepper
1/2 c. crushed saltine crackers
parsley chopped
paprika

Directions:
Directions:
Cook carrots in boiling salted water. Reserve 1/2 c. liquid. Cut carrots lengthwise in narrow strips (or use baby carrots). Arrange in baking pan. Combine reserved cooking liquid with mayonnaise, onion, horseradish, and salt & pepper. Pour sauce over carrots and sprinkle crackers on top. Dot with butter. Sprinkle with parsley and paprika. Bake 20 minutes at 350.
