3 boneless chicken breasts
1 large can of chunk pineapple
1 red pepper - julienned
1 yellow pepper - julienned
1 green pepper - julienned
1 cup of salsa
bunch of cilantro chopped

Directions:
Directions:
Brown chicken breasts. Remove from pan. Saute peppers until they soften. Add chicken, salsa and pineapple (undrained) into pan. Simmer 15-20 minutes until chicken is done. Add cilantro and serve over rice.

Options: I use a salsa with cilantro instead of adding cilantro. I have used a chipotle salsa for a spicy smokey version, also without cilantro.
