4 med. beets (about 1 1/4 lb)
2 shallots, minced
2 Tbsp sugar, divided
1 Tbsp water
2 Tbsp chopped fresh mint
3 Tbsp fresh lemon juice
1/2 tsp salt
1 Tbsp butter or margarine
1 tsp curry powder
1/2 c. walnut halves, toasted and chopped
3 c. arugula, watercress, or mixed greens
1 Tbsp olive oil

Directions:
Directions:
Cut tops from beets, leaving a 1" stem. Cook beets in boiling water to cover in a medium saucepan 35 minutes or until tender; drain. Peel beets, and cut into 1" pieces.

Combine shallots, 1 Tbsp sugar and next 4 ingredients; add beets, tossing to coat. Cover and chill 1 hour.

Melt butter in a skillet over medium heat. Add curry powder and reminging 1 Tbsp sugar; cook 1 minute. Add walnuts, and cook stirring constantly, 3-4 minutes.

Toss salad greens in olive oil; top with beets and curried walnuts. Serve immediately.
