Ingredients:  
1 Tbsp olive oil
1 medium onion, chopped
1 clove garlic, minced
1 can 46 oz vegetable juice
1/2 tsp Italian seasoning
1 - 15 oz can mixed vegetables, undrained
1 can Italian green beans, undrained
1 can Great Northern beans, drained and rinsed
3/4 cup cooked pasta shells
1 can spinach, drained

Directions:
Directions:
Heat oil, add onion and garlic, then heat 2 minutes
Stir in vegetable juice and Italian seasoning
Bring to boil
Cover and simmer 10 minutes
Add vegetables, beans, pasta and spinach
Cover, simmer an additional 10 minutes
