CRUST
2 cups margarine
2 cups sugar
4 cups flour




STRUEDEL:
8 cups peeled and cubed zucchini
2/3 cup lemon juice
1 cup sugar
1 tsp cinnamon

Directions:
Directions:
For Crust: Mix ingredients first saving out 2 cups for the topping. Roll out remaining mixture like pie crust onto a greased jelly roll pan. Pat down. Bake 10 minutes at 350.

For filling: Cook zucchini and lemon juice until it is tender. Add 1 cup sugar and 1 tsp cinnamon. Stir until completely mixed. Cool mixture in frig, stirring frequently. When mixture is cooled spread it over crust. Sprinkle with reserved crumb mixture. and bake at 350 for 40 minutes.
