Ingredients:  
2 lbs of stew beef cut into 1" cubes
1/4 c vegtetable oil
1 1/2 c chopped onion
1 1 lb can of diced tomatoes
3 tbsp quick cooking tapioca
1 can condensed beef broth
1 tbsp parsley flakes
1 tbsp garlic powder
salt and pepper
1 bay leaf
1 small bag pre-peeled carrots
3-4 medium potatoes peeled and cut up in cubes

Preheat oven to 350
Brown beef in hot oil. Add all ingredients to a large pot. Bring mixture to a boil. Bake in large covered pot for 2 hours at 350 or until meat is tender.
