1 - 6 oz. Package Uncle Ben's Original Long Grain
and Wild Rice w/seasonings
4 hard boiled eggs, diced
2 - 16 oz. cans dark red kidney beans, well drained
1/2 C chopped celery
1/4 C chopped onion, preferably Vidalia
1/2 C chopped bell pepper
1 C pickle relish
1 tsp. salt, 1/2 tsp. pepper
1/2 - 2/3 C Mayonnaise
Lettuce or romaine leaves, optional

Directions:
Directions:
Cook rice according to package directions. Cool to room temperature.
Combine all other ingredients except lettuce leaves. Toss gently. Refrigerate until ready to serve, and serve on lettuce leaves if desired.
