6 Roma tomatoes, diced
2 bunches green onions, chopped
1/2 small onion, diced
1/2 c green pepper, diced
1 jalapeņo chili seeded/finely chopped or 1 tbs canned jalapeņo chopped
1/2 fresh cilantro or 1 tbs dried cilantro
2 tbs lime juice
1 tsp garlic powder

Mix all ingredients. Let stand at room temperature 1 hour to blend flavors. Serve with enchiladas, tortilla chips, tacos and burgers.
