Directions:
Boil one chicken, add one cup of celery and cup of onion to the chicken pot. When chicken is done, save the broth, cool the chicken. Once cooled, pull chicken from bone and shred into bite sized pieces. Place the chicken in a bowl and mix with one cup of sour cream and one can of cream of chicken soup. In an 8 x 8 dish, put package of corn bread stuffing mix (Pepperidge Farms) in the bottom of the dish. Layer chicken combination on top of stuffing. Pour the rest of the stuffing mix on top. Pour two cups of the reserved broth, with the onions and celery, on top of the chicken to moisten all the stuffing mix. (Season the broth with salt and pepper first). Bake at 350 degrees for 30 minutes.
