Ingredients:  
2 med. boneless, skinless chicken breasts, cooked and cubed.
1c white or brown rice, cooked
1 can sliced water chestnuts (optional)
1 can sliced mushrooms, sauteed (optional)
1 can Cambell's cream of chicken soup
1/2 c chicken broth
1/2c water (if needed)
1-2 tsp lemon juice
1/2-3/4c shredded cheddar cheese
3/4c mayonnaise

Directions:
Directions:
Mix all ingredients together. Mixture should be moist but not watery. Add additional 1/2c water if too dry. Put mixture in a 9x9 glass baking pan. Bake at 350 for 35 minutes.
