2 cans of hominy, drained 1 can of chopped green chili peppers 1 medium onion, chopped 1/4 t. cumin 1/4 t. salt 1/4 t. black pepper 1 (8 oz.) carton of sour cream 1 1/2 c. grated cheddar cheese
Saute onions in small amount of oil till clear, add peppers and mix well. Add drained hominy & 1 cup of cheese. Mix till cheese melts then add sour cream and mix well. Pour into casserole dish and bake 20 minutes @ 350. Cover with rest of cheese and bake until cheese is melted.
