5 pounds sweet potatoes, scrubbed
1/2 freshly squeezed orange juice
1/2 cup heavy cream
6 tbsp butter
1/4 cup light brown sugar
1 tsp. ground nutmeg
1 tsp. ground cinnamon
Kosher salt and freshly ground black pepper to taste

For Pear Topping
4 tbsp. butter
4 Bosc. pears, peeled, cored and cut into eights.
1/4 cup light brown sugar
1 tbs. freshly grated ginger to taste
1/4 tsp. dried sage.

Prepare Potatoes: Prick each potato several times with a fork. Bake in a pre-heated 375 oven until soft, about 1 hour. Remove from oven. When cool enough to handle, break open potatoes and scoop flesh into the bowl of an electric mixer fitted with a paddle attachment. Add remaining ingredients and mix on low speed until just combined. Transfer to a large baking dish. Prepare Pear Topping: Melt butter in a skillet over medium-high heat. Add pear wedges, brown sugar, ginger and sage. Cook, stirring occasionally, until pears are lightly browned on both sides. Pour mixture over sweet potatoes. Bake in a preheated 375 oven until heated through, about 30 minutes.
