3 bell peppers, assorted colors
1 chili pepper (optional)
1 (28 oz.) can crushed tomatoes
1 clove garlic, minced
1/2 onion, chopped
1 tbsp. sugar
1 tsp. black pepper
1 bay leaf
1 tbsp. oregano

Directions:
Directions:
Char peppers (can be done on the grill or over a burner on the stove), turn until all sides are blackened. Put peppers in a ziplock bag until cool. Remove pepper skins, core, seed and slice the peppers.

Saute onion and garlic in olive oil. Add tomatoes, peppers and spices and simmer. Serve over linguine.

Sauce is actually better if made a day in advance and then reheated. It tends to bring out more flavor, especially in the peppers.
