red skin potatoes
olive oil
coarse kosher salt

Directions:
Directions:
Scrub potatoes, piece skins, rub generously with olive oil and top generously with salt.

Bake at 350 F until tender, about an hour depending on the size of the potatoes.

This is an incredibly simple recipe and we far prefer this to the traditional baked russet potatoes.
