1 medium onion, chopped
3 celery ribs, chopped
1 clove garlic, minced
1 can chicken broth
1 bay leaf
1 tbsp. Cajun spice
1/2 tsp. ground cumin
pinch red pepper
1 tbsp. corn starch
2 cans kidney beans
1 ring sausage, cut into thin slices

Directions:
Directions:
Sweat onions, celery and garlic in olive oil until tender. Add 1/2 can chicken broth and all spices. Add beans with liquid and sliced sausage, and bring to a slight boil. Add remaining chicken broth with corn starch dissolved in it and heat until thickened. Remove bay leaf and serve over rice.
