3 tbsp orange juice
2 tbsp plus 1 tsp cider vinegar
4 1/2 tsp fat-free mayonnaise
1 tbsp honey
2 1/4 tsp lemon juice
2 1/4 tsp olive oil
1/4 tsp salt
1/4 tsp coarsely ground pepper
12 cups salad greens
3 medium pears (thinly sliced)
1/3 cup crumbled blue cheese
1/3 cup chopped walnuts


Directions:
Directions:
For dressing, in a small bowl, whisk the first eight ingredients and let chill.
Divide pear slices among 6 salad plates.
Top pear slices with greens, blue cheese and walnuts
Drizzle each with 2 tbsp dressing.

During the holidays I skip the pears and add craisins to the greens.

I usually double the dressing recipe because we require more than 2 tbsp per plate!
I use New Zealand Multiflora honey. It is overpriced but does taste better.
