2/3 c. shortening
2 c. brown sugar
3 eggs, beaten
4 c. flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
Filling:
1 1/2 lbs. pitted dates, chopped
1/2 c. sugar
1 c. cold water
pinch of salt

Directions:
Directions:
Cream shortening and sugar. Add eggs and mix well. Sift flour and spices in a separate bowl. Add to creamed mixture. Mix until well blended, chill.
For filling; combine filling ingredients and cook until blended. Cool. Turn the dough on a lightly floured board and roll 1/4" thick. Spread date mixture on top. Roll like a jelly roll and wrap in wax paper. Chill or freeze. Cut into thin slices and bake on cookie sheet at 425 for about 10 minutes.
