1 cup chopped red or yellow tomatoes or cherry tomatoes
cup chopped sweet yellow pepper
cup lightly packed fresh sweet basil leaves, stacked, rolled and thinly sliced
1 clove garlic, minced
3 tbsp Extra Virgin Olive Oil
tsp sea salt
tsp black pepper
1 8 ounce baguette style french bread, ends trimmed and sliced inch thick

Directions:
Directions:
Combine tomatoes, yellow pepper, basil, garlic, 1 tbsp of the olive oil and salt. Set aside.
Combine remaining 2 tbsp olive oil and black pepper. Brush one side of the 16 slices of bread. Placed brushed slices on an ungreased baking sheet, oiled sides up. Broil 3-4 inches form heat for 2-3 minutes until lightly browned.
Top toasted bread slices with tomato mixture and serve within 45 minutes.
