1/2 cup olive oil
1/4 cup cherry preserves
2 Tbsp. cider vinegar
2 tsp. yellow mustard
3 grilled salmon portions
1 small pear, cored and coursely chopped
1 avocado, peeled and chopped
1/2 cup sliced green onions
1/2 cup honey-roasted almonds, coursely chopped
2 oz. blue cheese, crumbled
Salt and Pepper
2 cups leaf lettuce coursely shredded

Directions:

1. In a blender container combine oil, cherry preserves, vinegar, and mustard; cover and blend until combined.
2. Flake salmon into large chunks. In a large bowl combine salmon, pear, avocado, green onions, nuts, and cheese; toss with preserve mixture to coat. Season to taste with salt and pepper
