1 lb. hamburger
1 onion, chopped
1 lb. ricotta cheese
12 oz. mozzarella cheese, shredded
1/4 c. Parmesan cheese
1/4 c. Italian bread crumbs
2 eggs
1/8 - 1/4 c. parsley
1 (32 oz.) jar spaghetti sauce
1 (12 oz.) box large macaroni shells for stuffing

Directions:

Brown hamburger and onion; drain. Mix together cheeses, bread crumbs, eggs and parsley. Reserve 1/2 c. of meat for topping; mix the rest with the cheese mixture. Cook shells according to the package directions. Remove from water while still slightly firm; drain. Cover bottom of 9 x 13" pan with half of spaghetti sauce. Stuff shells with meat and cheese mixture and place open side down in pan. Cover shells with the rest of the spaghetti sauce. Sprinkle with rest of meat; then sprinkle with more Parmesan cheese. Cover and bake at 375 F for 30 minutes. Can be frozen and cooked later.
