Leftover mashed potatoes
diced onion
sliced mushrooms (fresh or canned)
a bit of butter
grated cheddar cheese
cooked, crumbled bacon (optional)

Directions:
Directions:
First fry the onion and mushrooms in the butter on medium heat until softened. If using fresh mushrooms cook until the water from them is gone.

In a baking dish, blend the onions and mushrooms into the leftover mashed potatoes, adding in most of the cheese. Keep a bit to sprinkle on top.

Bake at 350 long enough to heat through. Looks nice if you use a fork to make a design on top. Broil for 1-2 minutes to enhance the design and serve hot.
