4 lbs chicken
3 qts water
3 tsp salt
3/4 tsp pepper
3 cups all purpose flour
3/4 tsp baking soda
3/4 tsp salt
4 1/2 Tbsp shortening
1 1/8 cup buttermilk

Directions:
Directions:
Boil chicken in 3 qts water w/ salt. Cover, reduce heat, and simmer 1 hour or til tender. Remove chicken and cool. cut chicken in bite size pieces; set aside, Bring broth to a boil, add pepper.
Combine flour, soda, and 3/4 tsp salt; cut in shortening. Add buttermilk, stirring w/ fork until all ingredients are moistened. Turn dough out on well floured surface and knead lightly 4 or 5 times. Pat dough to 1/2" thickness. Pinch off dough in 1 1/2 pieces and drop into boiling broth. Reduce heat to med-low and cook about 8-10 minutes or till desired consistency, stirring occasionally. Stir in chicken.
