1/2 cup Bisquick
1/8 tsp pepper
2 cups shredded zucchini
1/4 cup grated cheese
2 beaten eggs
2 tbsp butter

Directions:
Directions:
Stir together Bisquick mix, cheese and pepper. Stir in the eggs just until the mixture is moistened. Fold in the zucchini. In a 10 inch skillet, melt butter on medium heat. Use 2 tbsp for each round and drop in skillet. Cook about 2-3 minutes on each side or until golden brown.
