1 Egg yolk

1 T. water

1 T. lemon juice

1 T. butter

Directions:
Directions:
Put first three ingredients in sauce pan and whisk together. Heat until custard stage, add butter, then serve over eggs benedict, broccoli or your favorite items that you have not prepared because the hollandaise sauce was too difficult. This sauce can cool down and hold in the custard stage before adding the butter. When needed, bring custard stage up to temp., add butter, then serve.
