10 oz. fresh spinach
1 pint fresh strawberries
2 tbsp. sliced almonds
1/2 tsp. butter
2 tbsp. honey
1 tbsp. oil
2 tbsp. cider vinegar
1/8 tsp. almond extract
1/4 tsp. poppy seeds

Rinse spinach and drain. Wash, hull and half strawberries. Combine almonds and butter in 1 c. glass measuring cup. Microwave on high uncovered for 1 1/2 to 2 minutes or until nuts are lightly toasted, stirring once. Cool. Combine honey, oil, vinegar, almond extract and poppy seeds. Mix or shake this dressing well to mix. Tear spinach into bite sized pieces. Place in salad bowl, add strawberries. Add dressing and toss salad lightly to coat ingredients evenly. Sprinkle with toasted almonds.
