1/2 c. raisins
1/4 c. cider vinegar
2 lb. carrots, grated
3/4 c. light olive oil
salt and pepper
dash of nutmeg or cinnamon
parsley

Directions:
Directions:
Soak raisins in vinegar for 30 min. Drain and save vinegar. Mix raisins and carrots. Add vinegar to oil plus salt and pepper. Sprinkle with parsley.
