6 red potatoes, cooked and cubed
2 stalks celery, diced
1 sm. package mushrooms, sliced
5-6 green onions, chopped
1/2 stick butter
2 tbsp dried parsley
4 slices bacon, crumbled
1 lg. can Evaporated milk
Salt and pepper to taste

Directions:
Directions:
Cook celery, onions, and mushrooms in butter until tender. Add potatoes. Cover with water. Cook until potatoes are tender-about 30 minutes. Add evaporated milk and parsley. Cook for about 15 minutes more until soup thickens. Sprinkle bacon on top in bowls. You can add regular milk if soup is too thick.
