2 c. rice, cooked
1-2 pounds shrimp, cooked and chopped
1 - 6 oz. jar marinated artichokes, reserve liquid
1 tomato, chopped
1 medium cucumber, chopped
1 sm. red onion, chopped
1/2 c. feta cheese, crumbled
1 sm. can chopped black olives
2-3 parsley leaves, chopped
1-2 tsp. lemon juice, to taste
Oregano, pepper, salt to taste

Directions:

Mix all ingredients (including liquid from marinated artichokes) and chill. Great summertime salad.
