2 c. split peas
8 c. cold water
1 medium onion, chopped
1 carrot, chopped
1 tsp. salt
1/8 tsp. pepper
ham bone, or ends of baked ham, or a ham butt

Directions:
Directions:
Soak peas overnight, wash, and drain. Add to fresh water with the ham bone, carrots and onion; cook until thick. Put through a food mill. Season well. Serve with croutons.

If this should get too thick, thin with hot cream. Dried beans may be substituted for the peas.
