1/4 cup vegetable or olive oil
2 tsp. season salt
1 lb. of small red-skinned potatoes cut in halves
3 ears of corn husked and cut in thirds
1/2 lb. of baby carrots
1 large red onion cut into wedges
1/2 lb. of fresh sugar peas

Directions:
Directions:
cooking time: 50mins.
preheat oven to 400


In a large roasting pan, mix oil and season salt
Add potatoes, corn, carrots, and onion
Toss to coat well.
Roast uncovered for 40 mins. or until veggies are lightly brown and almost tender, turn over.
Stir in sugar peas and toast for 10 mins
