1 1/2 lb eggplant, peeled and diced
6 T butter
2 onions, sliced
1 1/2 c canned tomatoes
1 c grated cheese
1 tsp salt
pepper
1 c dry bread crumbs

Directions:
Directions:
Saute eggplant slowly for 5 minutes in 3 T butter.
Place in buttered baking dish, with alternate layers of onions, tomatoes and 3/4 c cheese. Season each layer with salt and pepper. Top with bread crumbs which have been mixed w/remaining cheese. Dot with remaining butter.
Bake at 375 until tender and golden brown. 35 minutes
