3 lbs boiled potatoes
3/4 c hot water
3 tsp. beef base
5 tbsp vinegar
2 tsp salt
1/2 tsp pepper
2 tbsp diced onion
5 tbsp salad oil
4 slices of bacon in pieces
2 tsp parsley

Directions:
Directions:
Peel and slice potatoes into thin slices. Fry off bacon pieces and set aside. Mix beef base in water, set aside. Add all ingredients to sliced potatoes in bowl, mix well. Serve warm, if cooled before serving, microwave a few moments. If you are watching your fat, substitute imitation bacon bits for bacon.
