1/2 Cup Butter
1 Cup Packed Brown Sugar
1 Egg
1 Cup Finely Shredded Carrots
1 1/2 Cups All-Purpose Flour
1 Cup Whole Wheat Flour
1 tsp. Ground Cinnamon
1 tsp. Baking Powder
1/2 tsp. Ground Nutmeg
1/2 tsp. Salt

Directions:
Directions:
Preheat oven to 400. In a large bowl with a mixer, cream together butter and sugar until light and fluffy. Beat in egg and carrots. In another bowl, combine flours, cinnamon, baking powder, nutmeg, and salt. Gradually stir into creamed mixture, blending well after each addition. Drop cookies on baking sheets, press down with moistened fork. Bake in oven for 15 minutes or until cookies are golden and crisp. Allow cookies to cool on a wire rack.
