2 Cups Cake Flour
2 tsp. Baking Powder
1 tsp. Baking Soda
1/4 Cup Butter
2/3 Cup Sugar
2 Eggs
1 Cup Mashed Bananas
2/3 Cup Sour Cream
1/2 tsp. Vanilla Extract

Directions:
Directions:
Preheat oven to 350. In a small bowl combine flour, baking powder, and soda. Set aside. In a large bowl with mixer, cream butter until light and fluffy. Gradually beat in sugar, eggs, and banana; blend until batter is smooth. Add flour mixture a bit at a time, alternating with sour cream and vanilla, stirring after each addition. Spoon batter into muffin tins,leaving 6 cups empty. Bake in oven for 16 minutes or until firm to the touch.
